Fresh chopped herbs such as basil or Italian parsley

Cut
sausage into 1 inch pieces and sauté with onion and
garlic until sausage is browned. Add lentils and
toss well with sausage mixture. Add 2 cups chicken
stock and cook until most of the stock is
evaporated. Add more stock, 1 cup at a time until
lentils are tender. This will take about 4-5 cups
of stock and approximately 30 minutes of cooking
time.
Garnish with chopped herbs and a sprinkling of
grated cheese.
