Dear Friends of Stress Free Cooking,

Before everyone is totally immersed in holiday preparations, we want to take a moment to wish you a wonderful Holiday and a Happy New Year. We also want to share some exciting news, truly an early Christmas present for us. We recently learned that starting in January, AMG TV will carry the Stress Free Cooking Show as one of the Lifestyle programs it provides to broadcasters and cable stations nationally. We anticipate airing will begin in January with Season I. Stay tuned to our website at www.stressfreecooking.com for more information as January approaches. Hopefully many of you have already enjoyed watching Stress Free Cooking on ColoursTV and are looking forward to our second season which will air on ColoursTV in January. 

 

We'd also like to share this Stress Free recipe with you - enjoy it during the hectic holiday season. Our Shrimp Stromboli is a unique twist on a family favorite and perfect as an appetizer for entertaining, a cozy fireside supper or a delicious bring-along for football tailgating.

 

 

Shrimp Stromboli

Make this dish ahead and keep it in your freezer for a quick party dish or a light entrée served with a mixed green salad with white balsamic vinegar & extra virgin olive oil. 
Yield: 16 slices
1 package prepared pizza dough or your favorite pizza dough recipe
Stromboli Filling:
1 (6 ounce) bag baby spinach
1 (3 ounce) package sliced fresh mushrooms
4 ounces frozen, peeled, deveined large shrimp, sliced in half horizontally (uncooked)
¼ cup grated Grana Padano cheese
½ cup chopped chives


Equipment:
Large baking sheet lined with Parchment paper
Dough scraper

Roll dough into rectangle. Layer Spinach, Mushrooms, Shrimp, Cheese and Chives leaving a 1 inch border on all sides.  Begin rolling on one of the long sides.  Roll tightly and make sure that you finish seam side down on the parchment lined baking sheet.  Brush with extra virgin olive oil for golden color.

Bake 375 degrees for 35-45 minutes or until golden.
Cool at least 10 minutes before cutting.

 

 

 

 

 

Put on your bunny slippers, pour a glass of wine and cook!
