San Domenica Restaurant

Tony May and Marisa May are the father daughter team who are the co-owners of San Domenico Restaurant at 240 Central Park South in NY.  I called San Domenico and Tony was in Italy but I had the pleasure of speaking with my friend, Marisa, and getting this quote from her:

“Great cooking only come from great ingredients.  They are more flavorful and healthier.  Italian Cuisine is a simple cuisine because of the quality of the ingredients that require so much less cooking time and fuss.”

Tony is the authentic Italian products crusader of our time.  His knowledge of Italy and its foods is endless, you could listen for hours.  In his endeavor to make us understand the value of authentic ingredients Tony May has authored a cookbook titled Italian Cuisine: The New Essential Reference to the Riches of the Italian Table.  The chef at San Domenico, Odette Fada, is a true Italian gem right here in America.  I recently attended a Risotto festival in which she created an entire menu using rice.  Were you aware that there are now four kinds of rice imported to make risotto; Arborio, Carnaroli, Acquarello, and Valle de Nano.
